Tomato & Basil Soup

Its winters and all that you want is a hot bowl of soup. Nothing can a beat a tomato soup and this can be possible in winters only when you get red ripe tomatoes in the market.

Tomato &  Basil Soup


Ingredients:
1kg Tomatoes
1medium sized Onion
1/2 cup Capsicum
5 cloves of Garlic
20 Basil Leaves
Salt to taste
Black Pepper Powder to taste
3cups Vegetable Stock or water
2tbsp Butter or oil

Procedure:
  • Boil the tomatoes. Peel the skin when it cools down. Grind it in the mixer.
  • Heat oil/butter in a pan, add in chopped garlic. Roast them for a while till it turns brown in color.
  • Now add in chopped onions. Stir well. Let it cook till it turns pink.'
  • Now add in the chopped capsicum.
  • After 2 minutes, add in the tomato paste.
  • Let it simmer on low flame.
  • Add in basil leaves. 
  • Remove from flame after 15-20 minutes.
  • When it cools down. Again Grind it in the mixer so that it is smooth paste.
  • Then strain it with a help of a strainer.
  • Now add in vegetbale stock or water.
  • Put it again on the medium flame.
  • Let it simmer with basil leaves + black pepper powder + butter + salt until it thickens.
  • Remove from flame.
  • Serve hot with bread croutons.

Hot and Sour Vegetable Soup

This is a soup from the Asian culinaries  which is spicy and sour in flavour. Liked by one all it can be made both veg and non-veg.  I am posting a veg variant of it.
Hot and Sour Vegetable Soup

Ingredients:
1 small sized onion (Chopped)
1/2cup Carrots (Finely Sliced ) Long
1/2cup Capsicum (Chopped)
4-5 cubes of Paneer
6 cloves of Garlic
2 Green Chillies
1tsp Ginger Paste
A pinch of Ajinomoto
2tbsp Soya Sauce
2tbsp Vinegar
1tbsp Green Chilly Sauce
1tbsp Red Chilly Sauce
Salt to taste
1/2tbsp White pepper powder
1/2tbsp Black pepper powder
2tbsp Cornflour
1/2tsp Sugar
2tsp Oil
4 cups of Vegetable Stock

Procedure:
  • Mix cornflour in 3tbsp Vegetable Stock. Stir well so that no lumps are made. Keep it aside.
  • Heat oil in a wok, add in garlic + ginger.
  • When it is cooked add in Onions + green chilies.
  • Saute this for a while, then add in chopped capsicum + carrots.
  • Let this saute for 5 minutes.
  • Do not overcook as it has to be little crunchy.
  • Then add in the vegetable stock.
  • Now add in the cornflour mixture in it. Stir well.
  • Let this boil till it thickens.
  • Add in soya sauce + vinegar+ green chilly sauce+ red chilly sauce.
  • Add in salt + white pepper powder + black pepper powder + sugar.
  • Mix well. Add in paneer cubes.
  • Let it boil.
  • Serve hot.

Vegetable Stock

Stock is a flavoured water preparation. it forms the basis of many preparations and cuisines especially soups and sauces. it is made by simmering of various vegetables it it is a vegetarian recipe and meat and chicken if it is non-vegetarian.

 I am posting a very basic recipe of vegetable stock. it needs to simmer for around 30-45 min. in order to extract all the flavours from the vegetables.

Ingredients:
1l water
1 medium sized onion peeled and chopped
1 medium capsicum chopped
1 tomato chopped
1 carrot peeled and chopped
1/2 cup peas 
1/2 cup cabbage
1/2 cup cauliflower florets
3 cloves garlic
1 green chilly
1 medium turnip chopped
1 bay leaf
2-3 cloves
2-3 pepper corns (kali mirch whole)


Procedure
Take a vessel put in the water and all the vegetables.
In a piece of cloth put all the spices and a tie a knot. Now place this in the vessel.
When the water starts boiling lower the stove.
Let the mixture simmer for next 30-40 min.
Strain, cool and use it for whatever purpose.

cold winters wid hot vegetable soup!!!!!

hi, there i am posting my very first recipe.. hope u guys will njoy tryin it out.....


Mix Vegetable Shorba....
Ingredients.
7-8 Tomato's
2 Carrots
2 Snake Gourd (parval)
1/2 Beetroot (chukandar)
100 gms Spinach
100 gms Bottle gourd
2 Green Chilly
pinch of white pepper powder
Salt to taste

Procedure
Cut all the vegetables into small pieces.
Pressure cook all d vegetables for 10 min.
Remove from the stove.
Separate the water from the vegetables. and then put the vegetables in the food processor nd churn it well till it becomes a paste.
then put the paste in d water(which u separated frm the vegetables)
now sieve the mixture so that unwanted stuff comes on top of the siever.
now put the soup again on the stove so that it gets thickened....


Garnish it wid mint leaves and dollop of butter.


Serve hot wid bread crumbs and soup sticks..
